The vines grow on clay-limestone soils with a southeast exposure in the commune of Mancey, in the Mâconnais.

The grapes are all hand-picked and pressed before a 24 to 48 hour cold clarification. . The clarified must ferments in large and previously used old oak vats, to preserve its purity and minerality. The wine is aged on its lees for 11 months before being bottled.

Meticulous grower and winemaker Bernard Moreau has been in charge of his small family domaine since 1982. He has just two hectares of Chardonnay, between 20 and 28 years old, so yields are naturally low and flavour is wonderfully concentrated. He tends his vines with the utmost care, using sustainable, environmentally friendly methods. All the grapes are handpicked, then the wine fermented and aged in a barrel. While a quarter of these casks are renewed each year, most are 400 litres in size, rather than the usual 225 litres. This lends just the right balance of creamy roundness, crisp minerality, elegance and gentle vanilla complexity.
